Dietitian approved gluten free teriyaki chicken

At the best of times, meal prep is a bit of a chore. Add a gluten free dietary requirement where leftovers taste like a warmed up bad time, and you’ve got a chore no one can be bothered with on a Sunday afternoon.

Gluten free teriyaki chicken stir fry - recipe from Nutrition by Neda
Makes 2-3 servings
Ingredients
1 tbsp olive oil
600g chicken breast, diced
3 cloves of garlic, sliced or minced
1 medium capsicum, diced - we used green
2 cups shredded carrot - keep the skin on for extra nutrients
Handful of green beans
Handful of cashews
Rice to serve
For the sauce
1 can pineapple slices
¼ cup GF light soy sauce
2 tbsp maple syrup
1 tbsp white wine vinegar
1 tbsp chia seeds
2 tsp sriracha

Method
If streaming your own rice, start there. If using packet rice, skip to step 2.
Heat olive oil in a frypan over medium heat
Fry off the garlic quickly then add the chicken and cook for a few minutes
While that’s cooking, add all sauce ingredients to a blender and blend until smooth
Once the chicken is cooked through, add the carrot, capsicum and beans
Pour the blended sauce mixture over it all and stir through
Take off the heat once it reaches your desired consistency
Serve with rice
